When you have sent an appointment and forgot someone to invite, you can just go to your sent-items folder / right mouse click on that appointment / choose modify recipient!
Then the users who already accepted the appointment do not have to accept it again.
The appointment will only be sent to the new recipient.
(Assumed that the time hasn't changed but only the recipient list!)
