Previously in GroupWise 5.5 we used to be able to suppress some of those fields;is there a way to do that with GroupWise 6.5? I have not been able to find a property like that.

This is handled the same way in ConsoleOne as in NWAdmin.
On the properties of a domain object, there is a panel named "Address Book" on the GroupWise tab. It contains a "selected fields" column on one side and an "available fields" column on the other. So long as the admin-defined fields you're using stay out of the "selected fields" column, they won't be available in the Address Book.
