I need to find an article that details how I use YaST to update applications on SUSE 9.1. My main interest is using mirror sites to upgrade applications, although a list of local (Australian) mirrors for system upgrades would be good too.

Well, there's a list of mirrors here, including a number of mirrors within .au and .nz.
You can just paste that URL into YaST's "Online Update" tool as the "User Defined Location".
Just start yast2 and click "Online Update" in the "Software" section.
That's the basic process that users of SUSE Linux 9.1 (i.e. consumer distros) should use. Enterprise users can go through support.novell.com/techcenter and use ZENworks-related stuff.
For docs, check the KDE Help Center (not the Help menu in YaST, which is apparently not the same thing...).
