I am looking for a product that allows file encryption on a NetWare volume. Ideally the product will run on NetWare 5.1.

iFolder is your answer for both NW51 and NW6.
Having the files just encrypted on the server is not much good... it needs to be encrypted before it leaves the client, and preferably on the client anyway.
I would suggest that you look into a client-side encryption program.
One suggestion is iFolder - it encrypts before it sends across the wire, and is stored in that encrypted format on the server - obviously this depends on their using a pass phrase.
