I was told about the StuffKey Utility and about its ability to unload Symantec AntiVirus (SAV) before a backup, but I could not find the proper steps to perform this task in the instructions! After reading the docs and trying the utility out, I was able to get the desired results.

Here's what to do:

Create a SAV.TXT file (or anything you want to call it)

# Symantec ANtiVirus Stuffkey unload utility
<screen=Symantec AntiVirus Corporate Edition>
<af10>Y<cr>symantec<cr>
# End of file

Create SAVSTOP.NCF (or anything you want to call it)

# NCF file to automatically unload Symantec AntiVirus Corporate Edition
load stuffkey.nlm sys:system\sav.txt
# End of file

Yes this can be shortened, but hey, it works and I wanted to share it!
I placed stuffkey.ncf and the other files in sys:system\
EXAMPLE: SAV.TXT

# Symantec ANtiVirus Stuffkey unload utility
<screen=Symantec AntiVirus Corporate Edition>
<af10>Y<cr>symantec<cr>
# End of file

SAVSTOP.NCF

# NCF file to automatically unload Symantec AntiVirus Corporate Edition
load stuffkey.nlm sys:system\sav.txt
# End of file
